我要纠正一点,我这人比较无聊,没事的时候喜欢乱搜web of science看paper,
几个月前搜了一下关于鱼的污染问题,看到几篇对南方密西西比河和savannah河
为取样点里面鱼类的分析研究,有一个很不符合大家认识的数据,即crappie体内
水银含量,属于相当高的那种,和channel cat相当。我记忆中,大概排列是
striped/white bass > largemouth bass>crappie=channel cat>yellow perch
>bluegill
其中crappie的含量大概已经是bluegill的两倍或者三倍以上,和largemouth bass
差别已经不大了
其次,重金属如汞并非集中于脂肪,而是集中于肌肉。主要集中于脂肪皮肤和头部
的是PCB等难以降解的高分子。所以fillet可以有效去除PCB,但是无法去除水银
以下这段是从宾州consumption advisory抄下来的:
PCBs and most other organic contaminants usually build up in a fish’s fat
deposits and just underneath the skin. By removing the skin and fat before
cooking, you can reduce the levels of these chemicals. Mercury, however,
collects in the fi sh’s muscle and cannot be reduced by cleaning and
cooking methods. To reduce PCBs and other organics:
Remove all skin.
Slice off fat belly meat along the bottom of the fi sh.
Cut away any fat above the fi sh’s backbone.
Cut away the V-shaped wedge of fat along the lateral line on each side of
the fish.
Bake or broil trimmed fish on a rack or grill so some of the remaining fat
drips away.
Discard any drippings. Do not eat them or use them for cooking other foods
or in preparing other sauces.
所以并非panfish就等于可以放心食用了,密西根州的建议是州内野生鱼种每周每
人8寸以上所有鱼类只能吃一条,注意这个标准是针对去掉头和皮肤的纯fillet而
言。头和皮肤是PCB的主要聚集点。对于广大老中的进食习惯来说,进食量应该更
小才好
